Can't fight tradtional-so update that mayo based potato salad with my Southwestern Sweet Potato Salad.  When I tested the recipe, what an explosion of flavors and colors.  I love the roasted sweet potatoes as roasting truly brings out the flavor.

I was just in Denver on one of my favorite TV shows, 9News at 4,  preparing summer sides.  What would summer be without Potato Salad and Cole slaw so wait until you try my Crunchy Fruity Coleslaw and Double Roasted Sweet Potato Salad, featuring Louisiana yams.  Then off to Austin Texas where I ate so much barbecue and Mexican food...and I thought I couldn't get enough avocados!
